Who says you have to go boarding? Whistler isn't just a ski mountain, it's a RESORT as well. If you're looking to spoil yourself or someone for a certain special occasion, Whistler as a RESORT will have tons of things for you or someone. Not to mention, hanging at Whistler Village alone is a tourist attraction/destination in itself.
Secondly, at March 25, Whistler at the bottom will be no colder than what she is handling here in Vancouver.

If she's tired of you taking her out to the typical dinner/movie, why not just organize a gathering of her and her friends together to share the occasion. Whether it's a surprise party at your home, hers, or a group dinner at some restaurant. If she's not a total biotch, I don't know of any girl that wouldn't appreciate the effort that goes into organizing such things.
