Depends on OP's body type I guess.
If you have a skinnier build I suggest AE/Hollister.. Even their regular stuff is already "slim fit." So their "slim fit" stuff will be even more form fitting.
If you have a medium/average build or above, then try Gap, Old Navy, H&M. These stores never fit me properly. I find the arm pit area and below are always too baggy/loose.

+1. I absolutely hate how they plaster their ugly embroidered Eagle logo on the chest pockets of their dress shirts; some of them are actually quite nice designs and fabrics and I would wear them to work if it weren't for the Eagle logo.
But as for plaid shirts as OP asked for, there isn't much difference in style between more 'adult' stores and teen/highschool stores other than fits.
