To me, spicy sauce just goes against the philosophy of Japanese cooking and sushi especially. I mean, what's the point of talking about the freshness of fish when you drown it with spicy sauce? Like the California roll, spicy sauce is something I've only really seen here in North America. Simple flavors...let the fish do the talking.
Real sushi chefs have the flavors down to a science...subtle differences in the rice texture/flavor, how much wasabi to put in, etc. You watch Jiro? Dude has like different pots of rice for different fish. Even temperature is controlled to maximize flavor.
Or you can fire hose everything with spicy sauce so that you don't taste anything but spicy sauce.
That's perfectly fine, though. I mean, who cares if something is authentic or whatever when you enjoy it, right? Hell, I know I won't find a Taco Luis in Mexico but I love that place anyways so people are totally within their right to enjoy spicy sauce. I just don't like it myself.
