I guess a lot of it depends on how much you mind noise. For me, a system has to be just about silent, especially during quiet periods when not gaming. Any SLI rig is going to be a LOT louder, and it doesn't scale linearly - 1+1 card is way louder than 2 cards individually.
So with a pair of 7970, you are looking at 550W under load, compared to about 320 for Titan. Depending on which model, it could be extremely noisy, compared to not much sound at all on Titan...
Before deciding on an SLI rig, you really need to hear it for yourself first. I was using a pair of GF560's for a while - MSI Twin Frozr Coolers are very quiet on their own, but a pair of them were REALLY loud. It was so bad that I just gave up and used a single card, even though SLI performed much better.
