We're thinking about going to Disneyland for the day on Sunday. The other option is canceling the last night at the Thompson and booking a hotel in Burbank, that way we can leave Disnelyland late, get to Burbank and not stress about fighting traffic on Monday.

I would do option 2. I was in LA mid feb ish and traffic on Monday and Friday is the worst. Rather not stress over missing your flight and enjoying your time at Disneyland.
