Yep. I've been doing that for years.
I usually give it a quick rinse with salted water, drain them dry, then pop them into the freezer for like 10 minutes.
It seems to tighten up the flesh and make it more crisp.
But I would only do it to really fresh prawns.
Like they are still live and jumping around.
