All have GPS tracking
500 - no map feature, has cadence, speed, temp, laps, heart rate
510 - same as 500, but has live tracking capability (ur friends can track you live via a website - how fast ur going, where u are etc)
800 - same as 500, but supports map navigation
810 - same as 800, but has live tracking capability

don't bother with 800/810 unless you do randonneuring sportive rides where u need to navigate areas where you are unfamiliar. I've used an 810 before, and not once did i need to look down to see where I was on a map...
buy it if you're horrible with directions and get lost a lot. otherwise, it's a waste to have navigation.
on my 510 u can preset a bread crumb map if you REALLY wanted to do some type of pre-determined navigation.
