If you want really breathable insoles, just buy leather ones. They'll prolly have a thin layer of foam on the bottom which is fine as long as they're perforated..
If leather insoles are too thin for you.. find ones that are just perforated and scented foam. Terrycloth and gel get gross after a while.

Two-coats.. If you're wearing the same shoes every day, then spray them every two weeks or more if it's raining a lot..
Or you can use mink oil on polishable leather (ie. not suede, nubuck, reptile skin, patent leather..) to prevent and reduce the appearances of blemishes/scuffs. It will also make your shoes water resistant but the aerosol leather protector is more convenient.. Mink oil for the purpose of water protection also doesn't last as long..
