Instead of saying "Lots of stuff" just say "a lot." lol
but you can simplify it.

I apologize for any inconvenience that this will cause. I understand if you wish to dismiss me earlier than this date, however I understand my notice of two weeks should be ample time for you to fulfil the position.

I always try to be concise and to the point when it comes to dealing with business emails/letters. Niceties don't really take you anywhere, if they need you for something, they will ask you.
