I spent two nights in Shanghai last year. A few ideas:
Drinks at the bar at the top of the Park Hyatt.
Dinner (or lunch or both like I did) at Din Tai Fung
Viewing the skyline from the Bund riverfront
Walking the pedestrian area of Nanjing Road (go in the evening when the local performa karaoke in public, it's kind of bizarre to be honest)
French Concession area is also a nice place to walk. Lots of stores/boutiques to browse.
Yuyuan Gardens will allow you to see the traditional Chinese architecture
