You're correct about probate tax but you cannot get around it in the way you described. The executor has a duty to gather all the property and before distributing it the government takes their cut.

Yes, but you can make it a lot simpler when everything is in joint tenancy to claim that certain items are one person's and not the others. You basically claim the basics.
