The short answer is yes, but why? Weight savings or ? Personally, I would keep the triple, if you ever find yourself on some really steep climbs. Or if you want, you could always just remove a chainring, set your limit screw on your derailleur, and voila, you got yourself a double. Or remove your big ring and stick on a bash guard. =P
If you want to do it all properly, then yeah, what BCRDukes said, you should consider costs. New front derailleur, new double shifter, possibly new chain (or remove some links).
