The coastal drive is fantastic, and I try to go to Cannon Beach every year. It's a beautiful little seaside town. Maybe go down as far as the Redwood Forest before turning around.

Banff is also a nice drive, especially once you get East of Kamloops. The Rocky Mountains are fun, and there are a ton of places you can stop on the way (3 Valley Gap, Last Spike, Othello Tunnels, etc., etc). Only downside is Banff will likely be stupid busy this time of year.

Edit: Another idea is to island hop from Vancouver Island and eventually make your way to Queen Charlotte Island (or whatever it's called now... Graham Island?). Great way to see parts of the province that people barely think of.
