Hotels:
Both hotels you have in mind are good. Westin is right at the base of the chairlifts so accessing the village is only couple steps away. Late night bratwurst dog at the stand by the chair lifts . Fair Mont is a little further away. But they offer shuttles which come and go every 15min, last run is around midnight? Walking distance is about 15 min, mind you it gets cold at night around that time of year. I've had real good service at both hotels, but I usually book Westin for the convenience of location.

Dinner:
I love going to grill and vine inside Westin, open kitchen disign. Stone oven roasted pork and seafood linguini are my go to there. Still waiting for a Gordon Ramsey moment in the kitchen
Araxi was good, have a good selection for oyster bar

Things to do?
Scandinavia spa is awesome haha, their RMT are good but you'll need to book them ahead of time's
I love the RZR off road tour, ripping it up the mountain on a trail with a guide. Sick view While heading up and even better view on top (alpine sunrise tour)
