I consider myself to be a good student, i do very well on all my other courses and legitimately tried hard in this course and still ended up with a C and now i wish to appeal
my mark as i'm almost 100% sure i deserve at least a B-

That's the unfortunate reality with writing courses. If the TA/marker for whatever reason doesn't like you, you can expect them to give you a lower mark when grading your papers.
Same thing happened to me in BUS 360W. My prof hated me because I made a bad first impression, and it all just went downhill from there. When I went into office hours to ask how I can improve my writing, the only responses I got were "you should know", "what do you think?" and "you tell me". Very unhelpful imo, lol. Ended up with a C in that class.
One year later, I retook it with a different prof, and ended up with an A-. This prof actually cared about his students and you could tell he wanted them to do well.
You can try to appeal your grade if you want, but don't expect it to get anywhere. If you ask me, I'd just brush it off and move on. It's an English course and it's not really that important since you're a business student. The only writing course that employers MIGHT look at is BUS 360W, so just make sure you do well in that.
