Not every restaurant joins for the same reasons, there are definitely gems. We have started participating a couple years ago, each year it gives the chefs a chance to create some new 3-course meals that we normally don't do as Ebisu is more of a tapas restaurant. For $30 it is definitely a bargain, which is what we are trying to offer to customers during this event.
