"Hypersport" vs "Track+Street" tires?

Anyone have any thoughts on "hypersport" tires vs "track/street" tires? I'm a little unclear over their intended use.

I'm looking at the Bridgestone Battlax S21 and BT-003RS.

I don't commute on the bike so I'm not concerned about tire wear; this is really only for canyon carving. What I'm trying to find is a tire with really good dry traction, that'll warm up relatively quickly (something you wouldn't have to go out of your way to get up to good grip levels), while still getting at least some level of wet traction for when rain unexpectedly comes down.

Maybe another way to phrase this: what's closer to what the RE71R is for cars? A tire like the S21, or the BT-003RS?
