For myself it depends on distance and effort.
Generally...
30-40km I don't carry anything except water
40-60km banana
60km - 100km banana, cliff bar, gel 1 , coffee stop (snack + coffee)
As to what to eat, depends on how sensitive your stomach is. Keep in mind, when you're putting out big distance and it's a tough day out there, REAL food like home made rice cakes will go a long way!
