There are tons of quality breakfast spots in Vancouver to pick over the cookie cutter franchise chains like IHOP/Cora/Denny's/De Dutch.
A quick google will show up popular places like Medina, Jethros (made famous on Triple D's) and Twisted Fork, they are alright but not my personal recommendations.

My wife loves brunch, here's a simple list off the top of my head to get you started;
Oakwood - Currently my favourite restaurant for brunch and has been for a while. Every dish was a hit, you can taste the quality and fresh ingredients used.
Red Wagon - Hangover breakfast of champions place. Filling and delicious. Pulled Pork Pancakes ftw.
Marulilu - Small quaint little Japanese style breakfast joint. Super friendly smiling service, food is fast and very good prices for W. Broadway. They serve Canadian breakfast like bennies and such but I tend to get the Japanese dishes which you don't really find elsewhere, like the omelette rice is solid.
Zen - Near Kits beach, simple dishes but good flavours and good zing on the hollandaise sauce.

Thyme and El Camino on Main are very good as well.

Jam Cafe in Vancouver doesn't hold a grain compared to their Victoria location. The new one here sucks and is expensive too. 5/10
Piling on fruits that require no prep or cooking and then charging an arm and a leg for them. I'll pass.
IMO De Dutch is also ridiculously expensive for a crepe skin. I haven't been there in ages but isn't it like $17+ for the most basic one now?
