Nothing wrong with Eddie Vedder mountain. If you haven't been anywhere? Hit up the closest one, hopefully with someone who knows where they are going.
North Shore, despite it's taming down over the last 10-15 years is still aggressive technical riding. If you've never done any real mountain biking it will all be challenging unless you stick to Fromme, which is a boring climb up on the main road, and then take the first couple trails down (Bobsled or Floppy Bunny). Other then that, ride ride ride. Ride them all. There isn't a best, they are all good and different in their own way.
