I bought a Switch, and bought Mario Kart 8. I already had that for the Wii U, but it was a title that I wanted on a portable, and it was something that my wife wanted to play. It feels bad knowing that I spent more than $200 total on MK8.
Mario Kart 8 Deluxe is noticeably easier than the Wii U version. It's not just the additional item slot. There are some small changes that make a difference. The rubber-banding seems to be more in favor of the player. When you're behind, it is easier to get back to a podium position. Also, when you're ahead, the CPUs aren't as hot on your 6. Hit recovery is helped by a short period of invincibility after being hit. You won't be continuously stunned by a barrage of attacks. It applies to getting hit by the blue shell, too.
