Jeeze, so many "stories" here are just poop stories. I rarely have issues with multi-day diarrhea anymore whilst travelling by following some simple rules.
More times than not it's transit stress/jetlag in combo with drinking the water that gives you intestinal distress. Cooked food is usually fine. And by "drinking the water" that includes iced drinks and eating raw unpeeled produce that's washed in local tap water. Stay away from both (salads especially) until you've acclimatized to the local bacterial flora.
Cooked street food from popular stalls in Thailand and SE Asia shouldn't give you many issues since they wouldn't be in business long if they poisoned their customers.
