I will always remember this no tipping thing; Ritual was at downtown... was HUGE on charging more but staff has no tipping. It closed down.
Paying a young kid / hot waitress
a) $12 / hr and tip
versus
b) $20-25/hr but treat their staff really fairly with vacations / benefits.
Option A...is MUCH lower cost to owner within an industry working with single digit margins (as per interviews in Van Sun). Employees' incentive would be to continue to provide better service.
Option B
Much higher cost to operate, YES you can filter out those who are smart enough to realize 'no tip, but higher pay on average' BUT owners has to literally WAIT for the customers to realize the better service (no guaranteed) in result more business flow which is also an unknown.
So fuck that shit...I'm a business owner... I'm always going to choose the 1st option. Business is business....wishful thinking is the demise of running a busienss.
