Big Navi reviews are in and this is the gist of it:

-Basic performance is about in line with price. 6800 is 15% more expensive than 3070, and it generally performs around 10-15% better. 6800XT is usually with 5% of the 3080, which is 5% more expensive. Some games are better for one card, some better for the other, but overall performance is what you'd expect based on price.

-However Raytracing performance is really bad on the AMD cards. Unplayable in many scenarios. I talked about this before, where I said I'd expect next gen games to only use the most obvious portions provided by RT (reflections especially) and do away with the more subtle but expensive effects. PC games developed for full RT capabilities provided by Nvidia will not do well on the AMD cards. Multiplatform games should be fine. We're seeing more of a disadvantage now because most games with RT were made for Nvidia RTX, not the PS5 or XBOX SX, so AMD is at a huge disadvantage right now.

TLDR: It might be best just to buy whatever you can get your hands on if it's close to MSRP. If you play at native 4K though, maybe hold out for a 3080.

One thing to consider is that some games support DLSS on Nvidia cards, which can make up for the huge performance hit at the expense of some fidelity. It depends on the res, but DLSS going from 1440P > 4K looks really good, but going from 720p to 1080p basically just looks like 720p.
