Could probably put the fridge where the microwave is now and then the corner becomes pretty useful.
I put in an Ikea kitchen a couple years ago with a little help from my dad and my FIL. Turned out to be surprisingly easy to do on my own though we have very little patching up work to do. For the money it simply can't be beat.
