Ultrasharps are generally better suited for content creation where colour accuracy is more important. They come precalibrated out of the box.
If it's just for text, either should be fine, but you'll probably see more "practical" use out of a higher refresh rate.
Oddly enough, based on what I read on RTINGs, if you can calibrate the S2721DGF with something like a SpyderX, the panel actually has a wider colour gamut. Too bad the black uniformity is ass, although for text work, it probably won't matter much.
