For one thing, day trips to Macau and China are off the menu -- those places still have quarantine measures in place. Heck, even HK still has a 3-day "quarantine" of sorts where you can't dine in at restaurants, and there continues to be rapid testing requirements over your first 7 days of visit there. But you probably already know about those, or will be informed of what to do when you arrive.

Tourism has been hit hard because Hong Kong has essentially sealed its border off against the rest of the world literally until recently (maybe 2 weeks ago?). Add the ridiculously strict lockdown measures, and the economy is bad enough that lots of stores and restaurants have closed down.

If I were you, I would actually look into flying to Taiwan or Singapore for short (multi-day) trips. Taiwan has re-opened its borders, and COVID restrictions for incoming travelers are light. I personally do not like Singapore very much, but it has rescinded its entry measures for COVID.
