I've mentioned this before. My mom had a friend who made the most amazing rice. The traditional way. Pot over flame.
I remember her being autistic. Gifted when it came to traditional cooking.
I used to make rice the traditional way. Having a gas stove, I should really take up the challenge. Boil until water is almost gone. Turn it down, then off when there are holes in the rice (formed from the bubbling of rice). Take pot off stove and let cool. Fluff the rice a bit later. Put it all in a wooden rice tub (ohitsu) and cover.
Instead of traditional wooden ohitsu, I use this

Cheaper on eBay or Amazon.com. Same ones the sample ladies use at Costco. Keep rice warm and is dishwasher and microwave safe.
