I've added sound deadening to 3 cars, my NC (trunk), my TSX (doors and trunk), and my RDX (entire interior). Results varied with the TSX having the most impact. Doors are easy - you can do them in 1-3 hours depending on how detailed you are and how many layers you're applying (deadener, decoupler, and barrier)
The doors on a S2000 are probably as hollow as on a TSX so I'd guess you'd have some good results if you do them - the TSX sound system sucks but I was able to turn down the volume as a result and still hear music better (clearer and louder).
