But what about these websites like banks, etc. that ask for 2 step verification and send a text to your phone for a code. Suppose you're in Japan and want to check on your stonks or your bank, how does that work. You don't want them to send you an international text message so you can sign into your accounts.

Just disable your data on your CAN sim and use data only on your travel sim. Easy setting on your device. Turn off the auto data switching. Inbound SMS should be free on all carriers while roaming. Sending SMS triggers charges.
Worked for me the last 2 years of trips to Taiwan/HK/Japan/Singapore/China.
