I think I have a good idea on where they're going with Jesse's drug den and spiral into whatever the fuck he's doing. Not sure I like where they're going but still...I'll trust them to make it interesting.
This has turned into a slow burn season, I think but unless they pull some shit like they did in The Killing, I can't see it being terrible.
I think in his little stunt he 1. gave Jesse some purpose, 2. started to tie his loyalty away from Walt and to the organization and 3. by keeping him too busy with "two jobs" it forces him to sober up and rather then being so self destructive be focused and useful.
And on top of all that, it made a very pointed lesson for Walt that Gus can do worse then kill Jesse, the one person who's been on his side the whole time. Gus can turn Jesse against him.
Gus must rock at Chess and Poker.

What I don't understand is if Gus is recording the whole cooking process of Walt, can't he just hire a mediocre chemist to follow his exact same steps using the video footage?

I majored in chemistry for 3.5 years. Even if the measurements are as exact as you can make them, there's still variables such as timing. Even the smallest difference in the measurements will change the process (in this case, it would be the heating and setting times) which will snowball if that mistake is made early. I'm guessing the difference here is serious attention to detail and the knowledge of how to adapt it so that while the process varies each time, the result always remains the same. Walt knows when the vital times are to pay attention and when he can take a nap.
I thought the same thing for Jesse. They're sobering him up to make him less of a liability and at the same time, they're scaring them so they might stay in line.
