I've noticed that happen with Costco beef for whatever reason, meat starts going stinky and discolored only a day or so sitting in the fridge.
I know they always recommend you freeze right away, but with Costco it's kind of ridiculous.

I heard it was due to the mechanical tenderizing they do. Introduces bacteria just under the surface.
