ya man i just cant wait its olny like 19 days away too shit i know it seems long but its shit im just gonna keep playing the demo add me on RS then i will pm u my gamertag to anyone who buys the wheel and game and we will setup some tournements and shit drifts drag i think they also got touge which is one of my favs

Looks like you can adjust the inside car view in the full version. You do this from the multiscreen setup (for people with 3 screens or more). But you're able to adjust the main screen which is your cockpit. You can change it to what ever degree you want.
Here's the default cockpit view:
Here is is adjusted a bit back, but you can see your mirror and more of the interior as well:
