Seriously... asado in Argentina cannot be topped. A good parrillada para 2, salsa criolla y chimichirri, one's in meat heaven.

i loved the food in peru actually...
its true you can only eat so much ceviche but goddammit i did my best.
also the cheese in chile was awesome and cheap. ate cheese in every meal.

Peruvian food is good, but I wouldn't raise it to the level of the better known cuisines that some foodies are apt to do. Other than fish it's very starch heavy.
Outside of East Asian, Indian, French, Italian,and perhaps Mexican, traditional food the world over is pretty basic and generally designed to fill you up with taste being secondary.
