Because the soup is good. What's the point of eating pho if there is no soup? Just eating the noodles is not satisfying enough. I always drink most of the soup if the soup is good and clear.

So how do you people eat your pho?
For me, I put 2 pieces of lime,bean sprouts and that's it. I like to eat my basil and this other long string of leaf raw cause it would get all soggy inside the broth. Along with hoison and hotsauce mixed together for dipping. Absolutely no sauces into my pho xD I like to taste it naturally and not the damn sweet hoison.

up to today the surrey PHO right beside BUBBLE world is still the best motherfucking PHO one earth no joke. And i ate more than 20 difff pho locations. HEck i even used to work for PHO restaurant. This one their soup base is totally diff than the one u have tasted

I believe Mugen_Evolution is talking about PHO VINH. I always go there for pho since the day I found it.
Nothing beats waking up in Vietnam with a ice coffee and a bowl of pho for breakfast! Mmmm

^Hmm to me it is better than Pho Tam. Pho Vinh opened exactly a year from now since I tried it on the very first day they opened.
