Both Apache's were pretty deadly that one guy was the world knife fighting champion the older one that actually looked apache.

An even match would have been Ninja vs Apache. Both are agile, light weight fighters using terrain and opportunity to their advantage.
Sadly, they're probably saving the Ninja for the Pirate episode to satisfy the internet geeks.
I would, however, like to see Pirate vs Cowboy.

Apache stops to play bingo, gladiator stabs him in the back, apache loses.
Im pretty sure the romans had bows and arrows yet the apache won 188 fights with that alone.
Anyway in arena gladiator, in the forest apache.

Meh, I think the Vikings should've won, you can't stop 6+ft, 200+lbs of brute strength and they really undervalued the shield. Sword/Axe + Shield is a far more deadly combo than portrayed on the show.

Fair enough.
The thing is, apache had metal knives and other weapons which can act equally as useful.
Gladiators typically did not wear too much armor. They were slaves for entertainment. So their lives were not valued. So when we take armor out of the equation, it does not really matter what type of metal weapons you use. Human skin is very easy to penetrate and as such, it would lean more towards the attributes of the fighters.
