I don't know if it's "special" per say but it's recommended for their knives. It has 2 ceramic wheels you roll the blade over. One course and one fine. I have a global knife at home and it's fairly sharp but it's actually the least used knife in my kitchen because I feel the handle is way too small and I have very avg sized hands.

I purchased a kitchen knife from Lee Valley Tools last month when they had a clearance event. I saw it and knew I had to get it. Like most things I buy, I put it down somewhere and forget about it. I found it, washed it up and used it to cut some uber tough landjaeger. Shitmekaknobbers........this thing turned the landjaeger into jello.
It's very similar to the one in the link below. Discontinued or last one in stock. Anyway, I got it for under $40.00. I cut myself just looking at it, gulolol.

It is as sharp as the Hibana Miyabi Kiritsuke knife I bought at the Aberdeen Zwilling Clearance store ($200), but 1000 times more suited for daily use.

Yeah, I bought the Miyabi for its looks and prepping maguro once a year for New Years - oshogatsu.
Oh, forgot. I purchased a Made in Japan, Nakiri knife off amazon. Should be arriving soon. Time to get the whetstones out, 'cause knives like this don't come pre sharpened.

Bought some knives from Amazon. The brand is Kiwi.
The blades are thin and flimsy but super sharp.
The handle is basic but feels great in the hand.
The best part is they only cost $15 for 2 shipped.
I like these better than my Zwilling 4 star knives. Before you buy some expensive knives give these a try.

I’d rather burn $500 than give $15 to Amazon though.
All knives seem impressive when they are new, it’s how the edge retention is that you will see the difference in good knives and cheap knives.

I don't cook as close to as much as you but my next purchase is a good easy to use sharpener. These Knives are made in Thailand and I hear they are pretty common there.
I think this place sells them in Surrey if you don't want to support Amazon. Henlong Market They also have a sister brand Kom Kom that's a little more higher end.

It’s about having the proper variations of grit. I go 400, 1000, 2000, 4000, ceramic rod, leather strop. With a German knife though I’d say you’re wasting time going above 2000. The steel isn’t as hard as Japanese Damascus so if you go too fine you will just fold the edge over. You want a 17.5-20 degree sharpening angle. Soak the stone overnight and keep it wet. After 2k go to the honing steel.

I ended up buying a King 1000/6000 whetstone and after a learning curve, I managed to get my knife tomato thin sharp lol. I'm finding it doesn't stay sharp for very long though.
